TIME has revealed its annual list of the World’s Greatest Places for 2025, highlighting 100 must-visit destinations globally. Among them is Papa’s Bombay, a cutting-edge 12-seat chef’s counter in Mumbai, making it the only Indian restaurant to feature on this prestigious list this year.
Nestled in Bandra, this intimate dining experience at Papa’s Bombay blends nostalgia and innovation, offering a 13-course tasting menu that redefines Indian cuisine. TIME praises chef Hussain Shahzad, an alum of Eleven Madison Park, for his culinary creativity.

From serving khurchan (toasted rice bits) tableside to pouring Negroni shots from a hip flask, Shahzad surprises guests with unexpected touches. Signature dishes include Bugs Bunny—wild rabbit marinated with weaver ants—along with innovative takes on rasam, lamb Wellington, and more.
An Immersive, Nostalgic Dining Experience
Papa’s Bombay is more than just a meal; it’s a highly immersive, intimate experience that redefines fine dining. Located above a neighborhood sandwich shop, the restaurant feels like a private dinner party set in a 1980s Bandra home. The cozy 12-seat space, decorated with warm wood tones, vintage knick-knacks, and Art Deco memorabilia, exudes old-world charm while maintaining a playful modern twist.
At the heart of the experience is chef Hussain Shahzad, who personally engages with guests and shares the stories behind each dish.

TIME notes how Shahzad “walks around with a tray of duck biryani offering khurchan” and serves Negroni shots from a hip flask, blurring the boundary between chef and host. The 13-course tasting menu features unexpected interpretations of Indian flavors, with dishes like Bugs Bunny (wild rabbit with weaver ants) and char siu-shaped modaks that surprise and delight diners.

The evening unfolds as a multi-sensory journey, enhanced by interactive elements like metal puzzles passed around between courses, curated music, and storytelling that adds depth to each plate. By breaking traditional fine dining conventions, Papa’s Bombay elevates Indian hospitality into a theatrical, unforgettable experience.
“Papa’s is about breaking conventions—taking the essence of Indian hospitality and reimagining it in an intimate, immersive, and unexpected way,” says Sameer Seth, Founder & CEO of Hunger Inc. Hospitality. He adds that being featured on TIME’s list reaffirms their belief that hospitality goes beyond food—it’s about the entire experience.
